In medium bowl, combine tomatoes, cucumber, cheese,
olives, basil and oil; salt and pepper to taste.
2.
Prepare grill to medium heat. Season steaks with pepper
to taste. Place steaks on grill. Grill, turning once, 7-15
minutes (depending on thickness) or until desired
doneness is reached (145°F for medium-rare; 160°F for
medium). Remove from grill; season with salt to taste.
3.
Top steaks with tomato salad.

broth

Juice of y2 lemon
1.
In a saucepan, heat the canola oil for 2-3 minutes
over medium heat.

Sauté the onions for 4-5 minutes, avoiding any
browning, then add the garlic. Mix together.
3.
Add the tomatoes, vegetable broth and tomato paste.
4.
Bring to a boil, then reduce to a simmer for 15-20
minutes until tomatoes are soft.
5.
Remove the soup from the heat, add
the basil and blend in a blender or food
processor for 2-3 minutes until the
mixture is smooth.
6. Season with salt,
pepper and lemon
juice.
